Chef/Owner Brian Helm has a degree in Culinary Arts from the prestigious Johnson & Wales University located in Rhode Island. Brian has more than 21 years experience in the food and beverage industry working at the best restaurants, resorts and private clubs spanning the country. Examples include serving as Executive Chef at Embassy Suites, Jacksonville, Florida and Palm Coast Resort, Palm Coast, Florida. Brian has excelled in the food and beverage industry - becoming a leader in every organization. His culinary talents have been recognized by food critics and he has won numerous awards for his creativity. He excelled as a manager and business man administrating multi-million dollar budgets for profitable returns. He now has a drive to become a successful and respected restaurant in Saint Augustine, Florida.
In February 2006, Brian purchased the Wildflower Café the day after the Pittsburgh Steelers won Super Bowl XL. Second to creating delectable dishes, Brian loves Pittsburgh Steeler football and is a fan. He believes that building a cohesive team at the Wildflower Café is essential to the success of the restaurant.
“My favorite part of owning the Wildflower Café is creating dishes that customers are amazed by the quality of the product.” The Wildflower Café serves international dishes and changes the dinner specials monthly to maximize the quality of food.

Dae Lynn Helm, Brian’s wife and partner is also from Pittsburgh, Pennsylvania and holds a degree in Psychology from the University of Pittsburgh. She has successfully worked in non-profit and government work for more than 20 years. Dae Lynn works behind the scenes of the Wildflower Café on marketing, advertising and personnel policies. She joins her husband in the dining room on the weekends engaged with customers about their satisfaction and mutual acquaintances.
